Mexican Chicken Casserole:
1 clove of garlic
2/3 cup of fat free low sodium chicken broth
4 tsp of taco seasoning or a combination of your own Mexican spices
1 can of low calorie low sodium cream of chicken soup
¾ cup of fat free sour cream
¾ cup chopped tomatoes
8 ounces of green or red chilies
3 ounces of tortilla chips – unsalted if possible
1 and ¾ cups of shredded cheddar cheese
1 pound of cooked chicken which has been shredded
Combine the first seven ingredients in a pot and cook over a medium high heat until it comes to a boil. In a medium sized baking dish, spoon a portion of the mixture into the bottom of the dish. Layer with half of the tortilla chips and half of the shredded chicken. Top the chicken with half of the shredded cheese. Repeat this layering a second time, ending with the cheese on top.
Bake this dish at 350 degrees for 30 minutes. This dish serves fize people with a calorie count of only 300 calories per serving.
Substitute Items in Your Favorite Recipes
Anyone can make delicious low calorie dinners by substituting some of the high calories items with products that have lower calories. A lasagna recipe can be made using soy meat, which is available as crumbled hamburger. The ricotta can be replaced with low fat cottage cheese. There are many products available in low fat and reduced sodium forms, which include a variety of cheeses, salad dressings and soups, which can all be used as substitutions in recipes.
