Kale: Humble Yet Amazing

Kale is perhaps one of the most amazing foods in the entire planet. Chances are that you already know that if you are a health nut like some folks are. If you are just a normal individual, however, you will be glad to discover all the benefits that this dark green leafy vegetable has to offer. Read on to find out more about its nutritional value, its health benefits, and its many diverse methods of preparation that can usually yield surprisingly tasty results.

Kale’s nutritional value, in basic terms, is better than nearly every other plant in the world. It has a complex load of vitamins and minerals. It is chock-full of vegetable protein. In addition, kale is an excellent neutralizing vegetable when eaten raw (more on how to do that in a moment).

Kale benefits are many, as well. It has already been mentioned in a previous post (alkaline foods) that raw kale can help reduce your body’s pH. In addition, kale gives your body much-needed fiber. Need more convincing? It is an excellent source of anti-oxidants, too. When steamed, this green cruciferous vegetable can actually help you lower your cholesterol. Kale has also been discovered to lower your risk of at least five different kinds of cancer: bladder, breast, colon, ovary and prostate cancers can all be avoided by adding foods such as kale to your daily diet.

Now that you know all the health benefits of kale, here are a few ways that you can incorporate the greens into your daily diet. One of the easiest ways to get nearly every benefit of kale into your morning routine is through juicing. There are plenty of delicious recipes out there that will please your palate, but here are a few to get you started.

Green Lemonade
Juice the following vegetables and fruits together and chill before enjoying.

1 head romaine lettuce
6 stalks kale
3 Fuji apples
1 whole organic lemon
2 tablespoons freshly ground ginger, or to taste.

Kale Salad Juice
This delicious kale juice combines the green leaves with standard salad fare–tomatoes and cucumbers.

3-4 ripe tomatoes
6 leaves of kale
1/2 cucumber
1 clove garlic
A handful of parsley
1/4 lemon

Juice and enjoy.

In addition to these delicious juices that are excellent to kick start your day, try the following delicious ways to enjoy the entire leaf.

Steamed Kale
Steaming the kale leaves is actually a fantastic way to prepare kale as a side dish. Once it is soft and no longer stringy, remove from the pan and toss with just a little olive oil, salt, pepper, and fresh lemon juice.

Kale Salad

Another way you can enjoy it is in a very basic salad. To make it, all you need to do is toss together half a bunch of kale leaves (stems removed, leaves washed well), a chopped tomato, half of a ripe avocado, half a lemon’s worth of juice, and salt and pepper to taste. The secret to this yummy and vibrant salad is to mash the avocado and the lemon juice into the kale leaves. As you continue doing this, the lemon juice should react with the kale leaves and tenderize them. You will know it is done when the kale no longer retains its stiff consistency and appears wilted.
